what digital SLR do you recommend?

Looking for Digital SLR, nothing too complicated necessarily.
Ability to shoot in low natural light, and zoom, also print up to 30 x 40 inches at 300 dpi+. Ability to bracket may also be nice.

How much are you looking to spend? I think your first considerations - uncomplicated, low light and zoom (which is more a function of the lens, not the camera if it's an SLR) - are totally doable at a reasonable price. Your last request of producing 300 ppi (pixels per inch) images at a size of 30 inches by 40 inches requires a 96 megapixel camera, which puts your into a considerably higher price bracket (like $30 K). But, there are some nice, affordable programs (Genuine Fractals) that can do a pretty nice job of up-sampling your images to that resolution.
